Ingredients

•390ml warm water

•1 teaspoon (5g) honey, sugar, or agave

•1 Tablespoon (15ml) extra virgin olive oil

•1.5 teaspoons (6g) instant yeast

•500g white bread flour (4 cups)

•2 teaspoons (10g) fine sea salt

•140g (1 heaping cup) smoked Gouda cheese, cut into small cubes

•125g (1 cup) pickled jalapeños, drained and roughly chopped

Instructions

Step 1: Mix the Dough

In a large bowl, combine the warm water, honey (or sugar or agave), and olive oil. Add in the instant yeast and let it sit for a minute. Gradually add the white bread flour and sea salt, mixing until a rough dough forms. Let the dough rest for about 15 minutes.

 

Kid Tip: Measuring the ingredients can be a fun math lesson. Let the kids scoop and level the flour, or pour in the water with supervision.

 

Step 2: Stretch, Fold, and Add the Goodies

After the dough has rested, it’s time to stretch and fold it. Add half of the smoked Gouda and jalapeños, folding the dough over to incorporate them. Wait a few minutes, then repeat, adding the remaining Gouda and jalapeños.

 

Kid Tip: Kids will love sprinkling in the cheese and jalapeños. Make sure they wash their hands if they handle the jalapeños, as they can be a little spicy!

 

Step 3: Proof the Dough

Cover the bowl with a clean towel or plastic wrap and let the dough rise for 1.5 hours at room temperature. During this time, the dough will grow almost double in size—pure magic!

 

Step 4: Preheat the Oven

Preheat your oven to 250°C / 480°F with a cast iron pot or Dutch oven inside. The pot should be at least 4.7 liters to give the bread enough room to expand.

 

Step 5: Shape and Rest

Once the dough has proofed, shape it into a round loaf. Cover it with a bowl and let it rest for another 30 minutes while the pot continues to heat up.

 

Kid Tip: Letting the dough rest gives you a quick break to set up the baking area. It’s a good time for the kids to clean up the counters or help with dishes!

 

Step 6: Bake

Carefully take the preheated pot out of the oven (adults only for this step!). Place the dough in the pot, score the top with a sharp knife, and cover it with the lid. Bake for 40-45 minutes.

 

Serving Suggestion: Let the bread cool slightly before slicing. It’s delicious served warm with butter, or you can use it to make incredible smoked Gouda grilled cheese sandwiches!

 

Tips for Success

 

•Handling the Heat: If you’re not a big fan of spicy flavors, you can reduce the amount of jalapeños or use mild ones. For extra kick, keep the seeds in!

•Storage: This bread keeps well at room temperature in an airtight container for a day or two, but you can also freeze it. Just slice it first so you can take out individual pieces as needed.

•Getting Creative: Feel free to add extra flavors if you like! A sprinkle of garlic powder, a handful of fresh herbs, or even a dash of smoked paprika can add another layer of flavor.
