Scale
For the Crust:
375g bread flour (3 cups)
7g instant yeast (1 packet)
1/2 tablespoon salt
345ml (12 oz) lukewarm water
2 tablespoons olive oil (for coating)
Salt & pepper to taste
2 cloves fresh minced garlic
1/2 cup marinara sauce (or 125ml)
Toppings:
6–8 oz mozzarella cheese, sliced (about 170-225g)
1/3 cup black olives (about 50g), cut into spider shapes
1/2 cup mushrooms, cut into skull shapes (about 100g)
Optional: other classic pizza toppings like 1/2 cup pepperoni, 1/4 cup bell peppers, or 1/4 cup onions
Instructions
For the Dough:
In a large bowl, mix together the bread flour, instant yeast, salt, and lukewarm water. Stir until just combined.
Cover with plastic wrap and let sit for 15 minutes.
Perform 12 stretch and folds: stretch the dough up from the center and fold it back onto itself.
Let the dough rest for 45 minutes in the bowl, covered.
Transfer the dough to an olive-oiled baking tray and gently spread it out.
Cover and let it rest for 45 minutes.
After resting, poke the dough all over using your fingers to create indents. Coat lightly with olive oil and sprinkle with salt, pepper, and minced garlic.
For the Toppings:
Using a knife or a ghost-shaped cookie cutter, cut mozzarella slices into ghost shapes.
Cut mushrooms in half and use a straw to poke eye holes in the top half. Use a knife to create teeth on the bottom half to make skulls.
Slice black olives and arrange them into spiders with a whole olive for the body and thin slices for the legs.
Assembly and Baking:
Preheat the oven to 350°F (175°C).
Spread 1/2 cup of marinara sauce evenly over the dough.
Add your toppings (except for the cheese) on top of the marinara sauce.
Bake uncovered for 12-15 minutes.
Remove the pizza from the oven, add the ghost-shaped mozzarella, and bake for another 12-15 minutes until the cheese is melted and slightly golden.
Remove from oven, let cool slightly, slice, and enjoy!
